A Bridge to Pinal Villa

Finally some decent work is done on the road to Pinal Villa. Hopefully, we'll get two more. They did grade most of the road but there are still two more water crossings. We also have new night lights around the "campo de futbol". Cihuatlan Government is doing what it promised. 

Whoops .... make that two bridges.  They must have finished this one late yesterday. Only one more to go.

Expo-venta de "Coqueta"

Have you not tried the coconut caramel treat? The company "COQUETA" will have a large Expo-sale which will take place on February 26 this year, in the Jardin of San Patricio Melaque, from 5:00 pm.

Cajeta is a Mexican confection of thickened syrup usually made of sweetened caramelised goat's milk.

Mexican cajeta is considered a specialty of the city of Celaya in the state of Guanajuato, although it is also produced with the traditional method in several towns of the state of Jalisco, such as Mazamitla, Sayula, and Atotonilco el Alto.

Cajeta is made by simmering goat's milk, or occasionally a sweetened liquid, stirring frequently, until it becomes very viscous due to evaporation of water, and caramelized. While goat milk is the most usual base, other liquids or juices may be used.

Melaque First Beach Fishing Contest

About 20 contestants caught quite a few fish this last weekend, Many of them good sized. None compared with that Ray. A friend caught a smaller one with a spear gun in Cuatecomate. I don't know if these have barbs on their tails like the dangerous little Stingrays people often step on.

Kyoto is back

For good Japanese food open noon to 9 PM. The other Japanese restaurant closes around 5 in the afternoon. Like many restaurants here the owner will want his property back or raises the rent so Kyoto moved on and has been closed for about a year. Jose the owner, is a great guy and has no problem with 1/2 orders. Fried rice and shrimp is my favorite.They are located at the end of Taco Row next to the computer shop.
